UNUSUAL FISH
Jellied eels
Fresh cooked eels in jelly sold from the bowl, or by the 8kg bowl. The 8kg bowl is
ideal for a Cockney evening.
Salmon
heads
Especially used in the famous Malaysian
salmon head curry.
Blue
runners
From the USA, a very tasty white fish. Frozen whole fish.
Similar to Trevally jacks.
Wrasse
An attractive fish in many colours. Cleaned, head-on whole fish. Frozen.
Flying fish
Small, individually frozen flying fish, ready
scaled, in 1kg bags.
Pomfret
Well known on the Indian subcontinent. Plaice-type fish, thick, firm flesh,
best eaten on the bone. Cleaned and frozen
whole fish.
Espada
Long, thin fish -"espada" means "sword" in Portuguese. Little bone, lots of
meat. Fresh from Portugal, cleaned whole
fish.
Carapau
A small fish prized by the Portuguese
and cooked like sardines. Flown in
from Portugal. Cleaned. (Back to jacks
)
Saltfish
In Spanish, bacalao, in Portuguese, bacalhau, in French, morue, in English,
saltfish. Salt fish is made from varieties of cod: cod, ling, saithe and tusk. It is
a dried and salted fish which retains all the good qualities of fresh fish – only
the water has been removed. Soak them out to make wonderfully soft fish cakes.
Traditionally eated in Spain, Portugal and the West Indies. Very fashionable.
